What is the meaning here that underlined in red?
I try to guess the meaning as follow. Can you please check my understanding. Thanks.
"might be off" here that explained students might not need the degree.
 
The assumptions might be off. That means that the assumptions may not be quite right.

No.
It means that the assumptions might be wrong.

They might be wrong about the value of some degrees.

We could overvalue some degrees and undervalue others. Media Studies is a degree course that is widely criticised, but people could be wrong in thinking it is a "joke degree".
