I believe the two "correct" choices are:
Sorry for delaying one more day.
Sorry for delaying one day more.
(I believe that native speakers will not accept "Sorry for delaying
more one day.")

I read a post (I think here at
usingenglish.com) in which the poster
gave an interesting analysis of the two sentences above in bold type.
(1) First, many (most?) native speakers feel that both mean the same
thing.
(2) The poster said that in "One more
day," the word "more"
modifies the noun "day." That is, we are emphasizing how many more
days remain. One more!!!
(3) The poster then explained that in "One day
more," we are
emphasizing "more." That is, we are saying that the delay will be
more (long) to the extent of one day. ("More" is an adverb here, modifying "delaying.")
(4) As I said, both sentences probably mean about the same, but
some people (such as I) feel a difference there -- as explained by
the poster. I do not know his/her name, and I cannot find the thread.
