John has two cars: a red one and a blue one.
This sentence is correct but can you say, 'John has two cars, a red and a blue?'
 
You can. I wouldn't.
 
You can say "John has two cars; one red, one blue".
Then we can also say, 'John has five cars, three blue, one red, and one gray.'
 
Yes, but note my use of a semi-colon after "cars" in post #3. You need the same in post #4. Just for your information, "gray" is the American English spelling. In British English, it's "grey".
