One thousand times means 1, 000 times.
For example,
The teacher punished the child to write “I will not skip class” on his exercise book one thousand (1, 000) times.

A thousand times means countless times
For example,
Sometimes you have to fail a thousand (countless) times to succeed.

I’d like to know if the books is right.

In the example about failing, a thousand is not meant literally. Your alternative expression countless is not a good one. It's really just a hyperbolic way of saying 'many'.
