Some stalls at a coffee—shop in Bishan Street 22 remained shut on the second day of the Lunar New Year.

Those that were opened saw brisk business as some families decided to have their lunch out.

Should it be 'open' instead of 'opened'. I guess so.

Thanks.

Yes. The continuing state of being "open" is the important thing, not the fact that they were, at some point in the day "opened."

 The word 'opened' would fit only in a distinction like this:

Those that had already been opened [some time beforehand] saw brisk business, as their established clients did not try the new bars that were just opening.
