opportunity plus ing or infinitive

Which is more correct?

1) I look forward to the opportunity to meeting you and discussing the position.

2) I look forward to the opportunity to meet you and discuss the position.

Could I also write "I'm looking forward" instead of "I look forward"?

It's not a question of which is more correct; 1 is simply wrong [that is, on the more-less continuum it has a value of 0]. ;-)

And you can also use 'I'm looking forward'. Personally, I would say 'I look forward to meeting you' but 'I'm looking forward to our meeting', but this isn't a hard and fast rule - you can use either.

#1 is wrong, as BobK indicated. It would be correct (and clearer) as " I look forward to meeting you and discussing the position."
#2 Is not wrong, but it's clumsy and not natural. If you want to use "opportunity", you could write "I'm looking forward to the opportunity of meeting you", but I can't see why you would want too.
