From what I'm aware sentences can be started with "so" without breaking any grammar rules.

Can you please provide your input regarding "overtopper"?

A sentence can be grammatical but still wrong or unnatural or odd.

"So" is often used in casual speech to begin sentences even when there's no reason for it, but it's meaningless and considered by many to be sloppy. 5jj was giving you good advice, even if you don't want to follow it.
 
I don't think I've ever come across the verb 'overtop' before. If I hadn't just looked it up and seen it in context, I would've had no idea how it's used.

How exactly, and why, do you want to use 'overtopper'?
 
I haven't come across it either and my first reaction was that it isn't a legitimate word. From your post it appears it might be but it's obviously a very seldom-used one.
