Is it correct to say/write "it is Feb.8th today, 3 days pass the deadline" if the deadline was on Feb.5th?

No, it's three days past the deadline.

"Pass" is a verb and a noun. You need the adjective "past".

You need to capitalize the I in "It" and put a space between "Feb." and the dates.
