Do you call this a pot mat with ridges?

Or should it just be called a mat because it could also be used for pans (we sometimes just place the pan on the table if we run out of pots)?

It's a trivet, specifically a silicon trivet. There are lots of different designs but they all have the same purpose - to protect surfaces from damage from hot pots and pans.

I certainly know the word "trivet" but I don't use it much. I'd use "hot pad."

I've never had such a fancy device, I just use potholders. So, if you asked me, that is what I would call it.

Yes. To me, a trivet is the kind of hot pad that has three little feet. This one has no feet, so I'd just call it a hot pad, too.

I've never heard them called pot mats.

I've heard them called heat mats and pot stands. I have one trivet. It has no feet.
