Please check the following sentence
Jen quit the job and her and predecessor replaced her.
 
Please check the following sentence
Jen quit the job and her and predecessor replaced her.
There seems to be an extra 'and' that doesn't belong.

It does not sound logical. Predecessor is the person that comes before, not after. Unless the predecessor came back again a second time.

Shouldn't it be 'successor'?

I assumed that oxford meant 'predecessor', and that what you say happened.
It would be rather pointless to state that she was replaced by her successor - though I have heard more pointless statements.
 
Actually I want to say that Jen quit the job of director and associate director got promoted and became director. Could you please tell me how to say this sentence by using "Predecessor". Thanks a lot.

"Jen quit her job and became the predecessor of the new director, the erstwhile associate director."

More to the point, do you know what a predecessor is?

It's pointless to use 'predecessor'.

'Jen quit her job as director and her position was filled by the associate director.'

I agree, but the OP wants to use 'predecessor', in which case it's pointless giving a sentence without 'predecessor' in it.
 
Jen quit her job and was replaced by the associate director but we have no idea who Jen's predecessor was.

There you go. Now the sentence has predecessor in. ;-)
