She's a Russian speaker but she's Georgian.

I am not. I am Russian. :) In fact many people who aren't ethnically Georgian call themselves Georgian.

Yes, or "They call themselves Georgian".

In your version, "Georgians" is a plural noun. In my version, "Georgian" is an adjective.
