He likes riding under the sunset.

I want to say he enjoy riding the car during the time of sunset. Is the above sentence correct?
 
No. We don't say 'under the sunset'.

We ride a bike or a motorbike. We don't ride a car.

We ride in a car or we drive a car.

The phrase "riding/driving/walking off into the sunset" is used.

Or, to be a little less specific, at dusk.
 
Twilight is a nice, evocative word that means nearly the same thing.
