1) Set the clock an hour ahead.
2) Adjust the clock an hour forward.
3) Set the clock an hour behind.
4) Adjust the clock an hour backward.
5) Wind up the clock an hour ahead.
6) Wind up the clock an hour behind.

Please check my sentences. Do we use the same construction for clocks as well as for watches?
 
Clocks and watches have the same function - telling us the time - so any construction will apply to both. However, only your first sentence is usable and even that is unlikely to be heard from a native speaker.

Put the clock forward an hour.
Put the clock back an hour.
 
I would say "Set your clock back/up/forward a hour."

AmE uses 'set' instead of 'put'. The latter sounds odd enough to my AmE ear that I would be correcting any students I heard using it.
 
Winding a clock has nothing to do with setting its time.

Here we have another AmE v BrE difference then. We use "set" for making the time on a clock right for the first time.

I've just bought a new microwave and I'm struggling to set the clock.
The first thing I had to with my laptop was set the clock.
I'm going to set my watch to Spanish time as soon as the plane lands in Madrid.

When we add "forward" or "back", the verb changes to "put".
