We "put up" or "pitch" a tent. The opposite of "put up/pitch a tent" is "take down a tent".

Also

break camp - take down a tent or the tents of an encampment ready to leave.

I"m okay with "set up" the tent as well as "pitch" or "put up."

Is "set up the tent" uniquely American?
