I am trying to remember a verb which is the synonym of the verb ''to immerse''. Maybe I am wrong and this is exactly the verb I came across recently but I am not sure.

It's not generally a synonym for "immersed", but you can use buried in that sentence with only a small change in meaning.

Maybe 'engaged' or 'submerged'.

GoesStation's suggestion buried is an excellent synonym. You won't find a better one, I don't think.

I have seen "submerged" used occasionally to describe work or emotions overload. "To become very involved in something so that you do not think about anything else" (Macmillan Dictionary)"To overwhelm, as with work, difficulties, etc"(Collins Dictionary)

I agree, 'submerged' does work in this context.

You might also use 'threw herself into her work', although it's not nearly as concise.
