Can I change the words from "when" to "as"?

There are same meaning here?

'As' would be understood but, for me, it is closer to 'while' than it is to 'when'.

"When" is much better than "as." "As" indicates some sort of continuing "seeing," when what really happened is that she saw you and at that point in time, she ran out.
