If I say "do you want to go shred the mountains tomorrow" to a friend in the context that it's skiing season, would the question be understood as skiing or snowboarding?

Only if the person was familiar with skiing slang. If your friend has never skied before, then they're probably not going to understand you.

I don't do any snow sports myself, but I've heard enough movie references to 'shredding' to understand it.

Note my changes above. When you quote a complete question (inside the quotation marks), it must start with a capital letter and end with a question mark.
