Is the combination of so + adjective + noun correct here?

Masut had butterflies in his stomach. He'd never interacted with so beautiful a girl in his life. Laura could make him feel insecure and intimidated at once.

Yes. Most native speakers would use the less flowery "... with such a beautiful girl ...".

Note that "at once" doesn't work at the end. Use either "at the same time" or "all at once", although the latter would work better with more than two feelings.
