SOME and ANY

What a waiter in a restaurant would say to a client:- Would you like something to drink?- or- Would you like anything to drink?And - Can I get any drinks to start off?- Can I get some drinks to start off?
 
You will hear both some/something and any/anything used. When asking questions like this, where the answer is likely to be yes, we often use some. With the second question, I would use Can I get you any/some drinks....
 
I agree with you that it is not most suitable, but I could not find a more suitable one. Could you?

"Would" there is a conditional. If you wanted something to drink/If you could have anything to drink, what would you like/want?
 
Restaurant patrons are usually called customers or diners.
