So, instead of Sue's, I should use Sue"s? And instead of Jen's, I should use Jen"s?

I understand what GoesStation said, which means something is wrong with my understanding. I understand that a double quote is not related to an apostrophe. Hence, in the changes you've made, it looks to me like the double quote is used in place of the apostrophe.

A single comma isn't possible there. If you use the comma before "Jen", you also need one after "Jen". We tend to omit commas that would set off only a single word.
