1. and 2. mean the same. Literally, by 12 midnight today but more probably by the time it is due tomorrow.
3. is not the same as 1. or 2. because literally it means that the assignment would be finished sometime/anytime during the day tomorrow.

There is a mistaken belief that 'between' cannot be used with more than 2 objects, but when we are making a contrast or distinction - when we are emphasising difference - 'between' is preferable.

Compare:

I can't see any differences among the 3 boys

I can't see any differences between the 3 boys

Or in my field of work, you would never say: 'This agreement, dated 25 May 2010, was entered into among party A, party B and party C.'

It is perfectly correct. I will try to explain the difference between the two sentences which are both correct;

• I will finish my assignment by tomorrow.
• I will finish my assignment tomorrow.

In (1) tomorrow is a noun linked to the sentence by a preposition ‘by’ which means; at or before, have a look at the following example:
I usually finish work by(at or before) five o'clock.
I will finish my assignment by tomorrow(on or before the day following today).
In (2) tomorrow is an adverb modifying the verb of the sentence. See the examples below:
Come tomorrow(on the day following today) at this same time.
I will finish my assignment tomorrow.( on the day following today)

(It is wrong. The definitive time phrase (by tomorrow) warrants a perfect tense in this sentence. So 'I will have my assignment done by tomorrow.

I will finish my assignment tomorrow.
