My question is whether I can change both 'are's above to 'do's.

No.
You omitted a word in sentence 2.
Don't use write <are>s, <do>s. Use italics or quotation marks: ares, dos; 'are's, 'do's
 
Thank you for the reply. One thing I don't understand is about the first one. If I use " do" here, could it refer to "make" ?

Could you explain to me why "do" doesn't work here, please?

There's still a word missing. The only way that sentence could make sense would be with the addition of "look/appear".

Therefore, many ads make products look/appear much better than they really are.

With that addition, do you understand why "do" doesn't work?
