I’ve been a member of a Chinese forum for a while. Today, the admin asked me if I wanted to be a mod of the Chinese-Cantonese forum, I said:

Thank you very much for the offer but I don’t think I’m educated enough to take upon the seat of being a mod.

Is my italic reply good? How would you turn down such an offer?

Note my change above. "take up on the seat of being" is completely ungrammatical. There's also no reason to repeat "mod".
The admin clearly thinks you can do it. Don't put yourself down! Give it a try! If you really don't want to do it, I wouldn't say derogatory things about yourself in your response. Just say you don't have the time, or be honest and say you don't want to do it.

Thank you so much for your suggestion and you’re absolutely right that I shouldn’t say it that way. Could you please take a look at my rewrite to see if this honest version is better:

Thank you so much for believing in me but I’m afraid to disappoint you; I’m super busy almost every day.

It's better but it's a bit too wordy for my liking.

Thank you for the offer. Unfortunately, I'm too busy to take this on at the moment.
