[General] "the A of the B" vs "the B A"

Which form is preferable, for example " the velocity of the particle" or "the particle velocity"? Why?

Either form is correct, but the shorter form is usually better. Unless you start stringing lots of adjectives together and introduce the possibility of confusion.
 
But, as I mentioned in a post a few minutes ago, anything is possible in a phrase. That doesn't mean it's right when you put it in a sentence. I agree with Dave that usually the shorter the better, but I could think of contexts where "the velocity of the particle" is superior. Can you?
