Sherry was surprised to see me attending a local English club twice on Sunday night because I hadn’t been there for a few months due to the running of a kids’ club, which is also on Sunday nights.

I told Sherry “The club has been temporarily canceled because we don’t have enough participant but will restart again when the number is enough”.

Usually we need eight people for the club but now we have only seven, soon the number eight will come back and we will have enough participants.

Please help me with a grammatical and natural version of the italic sentence.
 
The club meetings have been (temporarily) suspended pending the required number of participants to be met.
 
How did you go "twice on Sunday night"? Did you turn up, stay for a while, leave, and then go back later?

I suspect you mean that Sherry was surprised to see you at two [different/separate] Sunday night club meetings [recently/in the last month].

Usually We need eight people for the club to run but now at the moment we have only seven. Hopefully soon the number eight will come back an eighth person will join and we will have enough participants and we can restart.
