Mangoes need to ripen at room temperature until the fruit yields to the touch.

Does it mean "until the fruit is edible"?

No, "yields to the touch" means that the fruit is somewhat soft when one gently pushes his fingers into the fruit.

In British English, this would have to be "...one gently pushes one's fingers ..."
