Are these sentences correct:

1) The thing I forgot I had to do was cleaning the cupboards.
2) The man I didn't know was behind me was Tom.
3) The singer I didn't remember was at the party was Jeff.

I think they are but that structure puzzles me a bit!
 
Did you write those sentences yourself? If so, why are you puzzled by the structure you chose to use?

I did write them myself, but they have the structure of a sentence I heard someone say.

It would make more sense if you gave us the sentence you heard and ask us how it works. Are you trying to practise "The [noun] I didn't [verb] was ..."?
 
Yes, they're grammatical.

The thing I forgot I had to do was cleaning the cupboards.
The man I didn't know was behind me was Tom.
The singer I didn't remember was at the party was Jeff.


The blue part is the sentence subject.
 
Jack: I forgot something.
Mack: What did you forget?
Jack: I forgot to clean the cupboards.
Mack: Oh.
Jack: I'll probably forget tomorrow too.
Mack: OK.
