these words as countable or uncountable

Hello,

I am really puzzled now about these words

1. cloud
2. sweet/candy
3. noodle

I've always heard native speakers use them in their plural form, but one of my native speaker friend is so sure they are uncountable.

I know this kind of questions must have been asked and answered many times. But I'll be really grateful if you could explain again, or link me to any resource for clarification. Thanks.

1. I would call "cloud" countable. I don't understand the Longman example of the uncountable use.
2. a. I would also call "sweet" (as a noun) countable.
2. b. Candy can be countable or uncountable. There is candy in the bowl. There are candies on the table.
3. "Noodle" is countable.
