"I thought of going to see John on Monday."
"I thought about going to see John on Monday."


I'd like to know if it is possible to use "Thought of" and "Thought about" interchangeably in this context?
 
They are both possible in the Canadian version of AmE, although the second is more common. I feel they have slightly different shades of meaning, the second hinting more strongly that the person dccided against doing that.
 
Just assume that any two different sentences are not interchangeable and focus on the differences.

You can also improve your question by telling us where it comes from. I suspect you may have in mind the pair of patterns thinking of doing something and thinking about doing something, in reference to a future possible action. Is that right?
