Are the following sentences idiomatic? (including the phrase in bold)

I think my pronunciation and my vocabulary are getting better and better every day. I understand next to everything now.

'I understand nearly everything now.'

Or "I understand almost everything now".

Does 'all but' work? The Oxford dictionary says it means 'very nearly'.

Close, but not quite.

YOU: 'Do you understand everything now?'

ME: 'All but.'

I am not a teacher.

I think my pronunciation and my vocabulary aren't bad, but when I listen to native speakers I understand next to nothing.

I am not a teacher.

Yes, or you could say, 'getting better day by day'.
