[Grammar] Until that is, we did our sums

A couple moved into their new home. Facing lots of renovations, they decided to call in the experts (to help them renovate this house). "Unitl that is, we did our sums. DIY seemed our only hope."

Here, I don't understand "until that is".
I know this sentence means “Until we did our sums, we found DIY was our best choice.”
But, what does "that is" mean?

I think the sentence sounds better if the word order is reversed:

A couple moved into their new home. Facing
the need to do lots of renovations, they decided to call in the experts (to help them renovate this house). That is, until they did their sums. DIY seemed to be their only hope.

Why is that "their" becomes "our".

In any case, there must be a comma after 'Until' in the original. "Until, that is, we did our sums." It's an interpolation.
"Until, I should say, we did our sums."
"Until, in fact, we did our sums."
