"Names of the Days" is OK but the second would be more natural as "Bird Names" or just "Birds".

Yes.
There are only 7 days of the week. There are only 12 months of the year.
There are only 7 dwarfs, 7 deadly sins, etc. When you can name them ALL, use "the."

You don't really need to use the word "names" in those titles, though.

Similarly, should I use "Weapon Names"?

Names of Weapons would also work- I wouldn't use the definite article unless you are listing all weapons - unlikely - or specific weapons. Weapons alone would also be enough.

For example, if you were playing the board game Clue, you could list the weapons, the rooms, and the suspects. There is a finite number of each.
