The noun is described by two relative clauses like "we don't have" and "that we really want".
Can we switch the position of "that" to "something that we don't have we really want"? And why can't we just say "something we don't have and (we) really want"?

Yes, "something we don't have and (we) really want" would be perfectly acceptable and identical in meaning.
