Is there any difference in meaning between "we'll(1)" and "we'll(2)"?
1. If you have time, call me and we'll do dinner.
2. We'll get the cakes for the coffee morning tomorrow, Jane.

No. They are both contractions of we will.

Re: we will

No. What makes you think there might be a difference?

Re: we will

While we're asking questions, what is "coffee morning tomorrow"?

While we're asking questions, what is "coffee morning tomorrow"?
'Coffee morning' is an occasion whn people get together over a coffee. This one is planned for tomorrow.

Re: we will

Is that an actual phrase? Like "cocktail hour"?

Re: we will

As you may have guessed, I was unfamiliar with the phrase and wondered if the OP has mixed up "tomorrow morning" with "morning tomorrow."

Thanks for the edification.
