As far as I know, only the second option is OK.

It would be quite odd to say "What a bright sun!" There is only one sun which we refer to on a regular basis (the one at the centre of our solar system) so we wouldn't need to use "a".

However, I suppose if I were an astronomer and I were to look into space and stare at another sun at the centre of another solar system, and that sun was very bright, I could exclaim "What a bright sun!"
