Put simply, when we are talking about days of the week, we use "on".
I go to school on Mondays and Tuesdays.
I leave for work at 6am on Thursdays.
What time do you want to meet on Saturday?
On a weekday, what time do you leave for school?
What do you do on Sundays?
In BrE, the exception is "at the weekend". In AmE, it's "on the weekend". Neither variant uses "in".
We use "in" for months, seasons and years.
I was born in January.
Where were you working in March last year?
Where will you be working in March next year?
Were you at school in 1974?
What do you like to do in the summer?
Where were you living in the spring of 2011?
If you specify an exact date, it's "on".
I was born on the 11th of January.
