The first two are fine. The third is not.
 
So, we can't say: "I've always liked the red colour (in general, not in some specific thing)." ?

"I like the​ red colour" wasn't in the original list. The third item was "I like red colour" which, as probus said, is not correct.
 
If you were looking at new cars or new dresses, for example, you could say "I like the red color," but you would be referring to the color of a particular item, not about liking the color red in general.

I see it as "red" being a noun and "the color" being an adjective.

In my view, the noun is "color" and "red" is a modifier telling us which color.
