Welcome to Using English.
In general, it's easier to answer questions like this when we have a full sentence.

However, "release date" is very standard.

I"m sure it's possible to write a sentence where "release day" is the better choice, but such a sentence is not occurring to me at the moment.

If I were to ask, "When is his/her/its/their etc. release day?" I would expect a response as "Sunday, Monday etc.
Whereas if I were to ask the same question, but with "date", I would expect, for example, "July 9" or "the 14th" etc. In any case and as always, context rules.

"Release day" sounds vaguely science fiction/religious to me. That's to say I can imagine it being part of the belief system of some futuristic cult.
