What are you pushing your hands with? Your feet?

You need a different verb. Are you extending them? The man in the picture is holding the dumbbells as high as he can.

While doing dumbbell shoulder press exercise you need to extend your hands as far upward as possible to work on your shoulders.

You don't have to hold them high. You need to bring them down and extend your arms again as high as possible.
 
If you use "XXX exercise" (singular), you need an article. If you use "XXX exercises" (plural), you can omit the article.

While doing the dumbbell press exercise ...
While doing dumbbell press exercises ...

You will find it a lot easier if you stop using "exercise/exercises". Instead of "While doing the sit-up exercise ...", say "While doing sit-ups ...". Instead of "When doing the plank exercise, ...", say "When doing planks, ...".
