Daisy rolled her eyes, but Nick looked totally unruffled. “Ah, Linda, my sweet. I was hoping you’d be our waitress tonight. I’ve missed that sunny smile of yours.”

Linda folded her arms across her chest. “Bite me, freak.”

Nick grinned, and for just a second, he looked so much like Archer that I clenched my teeth.

“Who’s to say I won’t, Linda?” Nick asked, raising his eyebrows. Daisy elbowed him in the side. Linda just glared until Nick waved his hands. “Truce, truce,” he said. “All right then, Daisy and I will have our usual.”

Actually, I think it refers to whether or not he will actually (literally) bite here.

"Bite me" is a sarcastic thing to say akin to "go screw yourself." Apparently (is this the vampire thing?), he's suggesting that literally biting her is a possibility.
 
Barb, you're so right!!!! I completely and utterly misread the OP and totally missed that. I've deleted the contents of my previous post and will now go away and wake my brain up! :)

Anyway, Tinkerbell, he's saying 'Who's to say I won't bite you?' It's a joke - taking the idiom over-literally. She doesn't laugh at the joke, but continues to glare. That's why he says 'Truce'.

Could you tell us the name of this book? The excerpts you have posted show that it has a very natural-sounding writing style, so although most vampire books aren't really my thing, I may enjoy this one!

Besides, anyone who includes an homage to The Great Gatsby, unless the naming of the characters was a coincidence, deserves at least a look-through.
