Hello.

Should I use 'knowing' or 'speaking' in my sentence and can I use 'will' instead of 'would'?
'Knowing English would be useful everywhere you go'.

You cannot replace knowing with speaking. But you can say: Being able to speak English..

Both will and would work.

'Knowing English would be useful everywhere you go'. Not necessarily true with "would" or "will" and "everywhere" Replace "would" with "could" to make it more plausible.
