I wonder if the sentence above could be rewritten as follows.

You should go out not stay at home.
 
It is correct if you add a comma as follows:

You should go out, not stay at home.

If so, I think the ‘stay’ is a noun. But I don’t know if it’s common to use it this way.

You are right; instead of should be followed by a gerund or noun phrase.

Perhaps, but why? Your first version is correct and natural, so there is no point in meddling with it.
