Hi,
I know most people say "We should at least give it a try" , but can you also say "At least we should give a try"? Is it grammatically correct to write a sentence like this?

"Grammatically correct"? Yes. Popular? No.
 
The idiomatic expression is "give something a try", therefore it's natural to include "it" because "it" represents "something".

There are other alternatives as well:

At least we should give it a try. (give something a try)
At least we should give it a go. (give something a go)
At least we should give it a shot. (give something a shot)
