Why is "industry" singular? If the advances have affected many industries, wouldn't it be plural?

We're not talking about any particular industry but industry in general.

I wouldn't use "would" there. The writer (OP) is stating an opinion about what will happen in the future.
 
"Would" implies a likelihood of something happening whereas "will" implies a certainty. It depends on how sure the writer is. On the other hand, it is also true that rhe word "opinion" takes care of that.
