about teachers and instructors

1) instructor of English OR instructor in English? I've seen both on jobs' advertisements.

2) I was told that English teacher can mean a teacher of English or a teacher whose nationality is English. Therefore is it less confusing to say I am a teacher of English?

1) They're both acceptable.

2) A native English speaker would likely assume that you mean a teacher of English. We usually qualify teachers by the subject or field in which they teach, not by their nationality.

Of course, if the conversation is about teachers of various nationalities, then it might be assumed you are referring to the country of origin, not the subject they teach. Context is important.
