Could you help me to make a list of activities students do in a typical PE class (ending in -ing ones are desirable, but not only these)?
1. jogging
2. jumping
3. warming up (how? doing what?...?)
4. doing stretching exercises
5.

In PE/Games classes in the UK when I was a child (it was called "PE" at my first two schools from the ages of 5 to 12, and "Games" at my secondary school from the ages of 12 to 16), there were many different activities, depending on whether the class took place inside or outside.

Outside, we played hockey, football, rounders, stoolball, tennis, kickball, cricket, went cross-country running or ran on a track.
Inside, we played badminton, indoor football, used climbing ropes, did gymnastics, trampolining, star jumps, sit-ups, pull-ups, running on the spot, skipping.

And how can "exercising" be used in a sentence?
In PE class we normally do a lot of exercising. Is it OK?

I would use the uncountable noun "exercise".

In PE, we usually do a lot of exercise.

If you want to bring someone's attention to the different forms of exercise, you could use the countable version and say "In PE, we usually do a lot of different exercises". However, note that things like football and tennis and jogging are not "exercises". They are sports or types of exercise.

If your school has a pool, swimming is usually part of PE class, too. We also had volleyball, archery, golf, tennis in addition to most of the activities listed above. By the way, traditional gym exercises like jumping jacks, push-ups, sit-ups, etc, are usually referred to as "calistenics."
