Is it correct to state that an adjective describes a noun and an adverb says something about a verb ? Or is this too simplistic ?

An adjective describes a noun and an adverb describesabout a verb .It is right.

It is correct but too simplistic.
An adjective modifies a noun or a pronoun by describing, identifying, or quantifying words.
She is a beautiful girl. (beautiful modifies the noun ‘girl’)
She is beautiful (beautiful modifies the pronoun ‘she’)
An adverb can modify a verb, an adjective, another adverb, and also a phrase, or a clause.
He drove slowly. (modifies verb ‘drove’)
He drove a very fast car (very modifies adjective ‘fast’)
He drive quite slowly down the road. (quite modifies adverb ‘slowly)

sure. there are kinds of adverbs,adverbs of manner,time,place........
