2. I will be back to Hong Kong next Monday.

Which of the above sentences is correct?

Which of the above sentences is correct?

Back to will also be correct, but in a different construction:
I will go/come back to Hong Kong next Monday.
Here, you have a verb of movement (go/come), in which case you use the preposition to; if it's a form of the verb to be, then you use the preposition in.
