Hello,

Is the sentence below correct?

"I remember working with a guy who could not speak any foreign language but boasted himself of being able to communicate with his German co-worker by drawing pictures on paper."

Or boasted that he was able.
 
The phrasal verb you‘ve invented (boast oneself of] is reminiscent of one that does exist, pride oneself on. Perhaps you were half-remembering that...?

Example: He prided himself on his handwriting.

Johny, that sounds like the sort of phrase you might have encountered in the 120-year-old literature you are so fond of.
