Einstein cared little for money, though he could have been very rich. He once refused to speak on the radio for $1,000 a minute. Another time he was seen using a check for $ 1,500 as a bookmark. Then he lost the book!

I’d like to know if the use of “cared for” in the first sentence is appropriate. I mean whether it should be changed to “cared about”.

The "for" in that sentence is not an error, but you could use "about" there instead. (You can't always make such a substitution.)

For what purpose did the textbook quote that text?

In this usage, care for is similar in meaning to 'like'.
